In high school chemistry we learn about pH.  If you suffer from psoriasis or other inflammatory conditions, it is critical to refamiliarize yourself with pH. Acids have low numbers.  Alkalines have high numbers. A pH of 7.0 is neutral. The normal range of human arterial blood has a very narrow range of 7.36 to 7.44 (slightly alkaline).  Blood that has a pH below 7.35 is too acidic, while blood pH above 7.45 is too alkaline. Preserving blood alkalinity or pH balance is the foundation on which optimum health is built.

The alkalinity or acidity of our system depends largely on the foods we consume. The modern diet (fried foods, soft drinks, sucrose, sugars...) is too rich in acid producing foods. An analysis of more than 200 ancient cultures, shows that the average Palio diet consisted of 45 percent plant foods and 55 percent animal foods. The plant foods consisted of stalks, leaves, seeds, fruit, tubers, and roots while the animal foods included proteins and healthy fats. Cow's milk and grain didn't enter the picture until about 10,000 years ago --  too short a time for genetic adaptation. Prolonged stress also pushes the body toward acidity.

When the blood is acidic, the bedrock of health is undermined as the body becomes vulnerable to out of control yeast, fungal overgrowth and disease. When the body tilts toward greater acidity we tend to have a greater risk of developing osteoporosis, weak muscles, heart disease, diabetes, kidney disease, and a host of other health problems including chronic skin conditions. According to scientists who research acidification, eating a diet that yields more alkaline and less acid (high in fruits and vegetables) is key to maintaining proper pH.

Acid yielding foods lower the body's pH. Excess acid is typically carried by the blood to the skin and kidneys for elimination. The kidneys coordinate efforts to buffer acidity by releasing calcium and magnesium from the bones and breaking down muscle to produce ammonia - a strong alkaline. Acidification occurs when the body is unable to rid itself of acid. Because tissue tends to withstand fluctuations of pH better than the blood, acid tends to concentrate in the body's deep inner tissues. When available, the body uses mineral reserves to neutralize excess acid. When acids bind with alkaline minerals, a neutral salt is made. Neutral salt enters the bloodstream for elimination without affecting blood pH.
